This turned out extremely well, with plenty of opportunity to adjust flavors to your taste. The only reason I substituted was to accommodate the leftovers I had. I had made a slow cook turkey stock the day before, which was thick when it cooled, so I used 8 cups of that with 4 cups of water with the broth. I also used leftover gravy (about 1/2 cup) instead of the poultry seasoning and salt (my stock was already seasoned and flavored, too), I also used more like a cup of the leftover stuffing / dressing. Lastly, I used fat free half and half, because I can never tell the difference. And I added a bag of frozen peas as others had suggested.
I am often hesitant to make recipes that have only a few reviews, when I'm putting together a meal on the fly. But the flavors in this one sounded really good, so I thought I would give it a try. I'm so glad I did! I made no variations to the recipe, and it turned out to be incredibly delicious. This is a keeper in my recipe box. I highly recommend this recipe to anybody that wants to try a flavorful, filling, and fresh dinner. It was an easy weeknight meal. And it was a huge hit with my family!
Wow. Just wow. I made this for a group, and every bowl was empty in 15 minutes. I was required to make some substitutions because of what was available where we are on vacation. I used red curry paste and traded one of the 5 tablespoons for a tablespoon of peanut butter. And I used regular basil, natural can sugar, and a combination of bay leaf and lime zest. I also added red bell pepper and rainbow baby carrots. This dish was PHENOMENAL. I will make this again and again.
Cold winter night and I wanted a hot drink with a little kick, and this was lovely. I substituted granulated white sugar for the confectioners (it's what I had) and I used coffee ice cream (again, that's what I had). It was delicious and warming and wonderful. I'm off to make another!
Delicious pairing with mahi mahi. I didn't have jalapeño, so I added some cayenne pepper and a tablespoon of honey. It turned out very well. I also had very fresh, ripe, and flavorful pineapple and mango, the juices of which made the flavors combine beautifully. A really great summer addition to any meal.
